Lionpaw’s “Healthy” Chocolate Chip cookies!


morecookiesCollageYou might be totally surprised by my “healthy” partial substitute for butter! But this is my own recipe that I made with my daughter today!

I knew we would have a relatively small crowd over at the house to play some games outside so it seemed like a great idea to make some cookies for desert tonight. It also a great activity to keep two toddlers entertained and work on some counting and measuring skills. We made some very “healthy” chocolate chip brown sugar cookies.

My recipe is as follows and mind you, the measurements are just about. I don’t make any effort to have perfect/exact measurements.

2 eggs
2 cups of brown sugar
3 1/2 cups of flour
2 teaspoons of baking power
1 teaspoon of baking soda
1 teaspoon of cinnamon
1 teaspoon of salt
2 teaspoons of vanilla

3 teaspoons of water
1/2 cup of butter
2 jars of Banana and Apples baby food *****
1 cup of chocolate chips

* 1/2 cup of coconut

I put all ingredients except the butter, baby food, and chocolate chips in a bowl and let my daughter mix them together. I added the butter, mixed it. Added the baby food, mixed it. Then added the chips. I baked them at 350 for about 11 minutes! they came out great!
