I love it but its not as healthy as it could be, but it is healthier than some alternatives!
3-5 lbs of potatoes
1 garlic clove
I make the potatoes like I would for mash potatoes and cook them until they are just about done. 1 potato per a person and 1 or 2 for the “pot”.
when its done I drain and let the potatoes set in my strainer. Brown the diced onion and garlic. Sprinkle on 3 to 4 spoons of flour. Add potatoes and stir. Add 2% milk to cover all potatoes. shake some pepper to taste and simmer for 20 minutes. sometimes it needs a little more flour to thicken it.
Grate fresh cheese over top and serve!
I sometimes garnish with cooked diced turkey bacon or just add a pound of cooked turkey bacon when adding potatoes.
